Zucchini Pancakes
Ingredients
4 cups of grated zucchini, 1 onion, 2 large eggs, 1//2 cup of grated cheese, 1 cup of flour, salt, pepper, 1 TB of baking powder, 1 tsp of Italian season, garlic, olive oil
Roasted Tomato Sauce
Here is a summertime Roasted Tomato Sauce recipe from one of MHCG’s members.
The photo is before roasting.
Use a rimmed non-stick cookie sheet.
Coat the pan with a little olive oil.
Thinly slice a yellow or white onion and spread slices on the pan.
Tomato Puff Pastry Tart
Ingredients:
1 tablespoon extra virgin olive oil.
3 cups cherry tomatoes, we mixed purple bumble bees, sun golds & cherry.
2 tablespoons chopped fresh thyme.
1 tablespoon chopped fresh oregano.
Meatless Zucchini Loaf
Ingredients:
1 tablespoon extra virgin olive oil
2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh oregano
3 green onions
2 cloves garlic, chopped
Himalayan pink or sea salt
Parmesan or your favorite cheese
Jalapeno Hot Sauce
Hot Sauce from scratch. You may use other hot peppers in place of the jalapenos.
