Meatless Zucchini Loaf recipe submitted by Garden member Teresa
Ingredients:
1 tablespoon extra virgin olive oil
2 tablespoons chopped fresh thyme1 tablespoon chopped fresh oregano
3 green onions
2 cloves garlic, chopped
Himalayan pink or sea salt
Parmesan or your favorite cheese
Large zucchini
26oz of favor marinara sauce
Instructions:
1. Preheat the oven to 350° F. Add 3/4 cups of marinara sauce in baking dish
2. Brown meatless sausage with olive oil, thyme, oregano, garlic, sea salt. Add half of green onions last and stir for an additional 1-2 mins. Add marinara sauce.
3. Cut zucchini in half and remove center and arrange in baking glass dish. Spoon sauce mix in center of zucchini
4. Cover with foil and Bake 15-20 minutes.
5. Uncover to sprinkle the cheese over the sauce or favorite cheese as demonstrated. Bake for an additional 4-5 mins. Top with remaining fresh green onions. Eat and Enjoy!
